Cheese dairies from all over Switzerland send their best cheesemakers into the competition with their highest quality products. These can also be tasted and purchased at the cheese market. The focus of the culinary festival is on Ticino Alpkäse AOP. Because no other cheese reflects the special nature of Ticino like the tasty "fromaggio d'alpe ticinesi" AOP.
